The airlock is only to allow excess gas to be released from your fermenter. If it’s working then it’s definitely still fermenting. If it has stopped it may mean that your fermenter is not that well sealed. This will not affect your beer. You can usually see a fermentation line above the level of the beer in the fermenter. If you don’t see this line after a day or so, there is a problem. At this time it is usually too late to add another yeast.
We provide free filtered water in store, but also sell a variety of cost-effective water filters you can set up in your own home. It's a worthwhile investment if you're planning on getting into the hobby for the long term.
All-grain brewing differs from standard extract brewing primarily in how you produce the wort. All-grain wort production involves soaking crushed, malted grains in hot water to change starch into sugar. After that, the resulting sugary liquid is drained away, boiled for an hour or so with hops added at different times, cooled and put in a fermenter. Depends on how much Malt (work) how much Yeast (workers) and the Temperature and Aeration (conditions). So, more malt will taste better but it may take a little longer. Controlling the temperature with ice in a box or a fridge controller will produce a better beer, but it may take a little longer. As a guide - A Diamondback or similar with a Goodies Pack at 25°C will be ready to bottle in around 10 days, if kegging, give it another 4 days to clear. If using a fridge controller, cold crash at 14 days and then keg a few days or longer after that.
